The Simple Woman's Daybook . . .

 

 


FOR TODAY, October 4th, 2022

Outside my window ...
It is still dark. It's garbage day today. And it's not raining. Wonder of all wonders, lol.  It is frosty however!

I am thinking ...
My son still has no electricity. Thankfully the people my DIL works for has loaned them a generator, but not before they lost the contents of their refrigerator and freezer.  I think perhaps a generator is a wise investment for any family, but it's not something I can afford at this point. I would have a difficult time manhandling one around as well. The house I had put the offer on had its own generator.

I am thankful for ...
The leaders of my church and the wonderful wisdom, words and inspiration they shared with us over this past weekend, the music and the choirs.  It was all pretty special.

In the kitchen ...



Oven Roasted Butternut Squash.  This simple method of cooking really enhances and highlights the natural sweetness of this beautiful vegetable.

  1. Hoping the hydro is back on at your son's house soon, but the hydro companies have so much to deal with. A bit frosty here too, but gets warmer by afternoon. Happy Tuesday.

Recently tried out a method of keeping celery that I saw on a youtuber video...you wash it, wrap it in a damp paper towel and then surround with foil and store in veggie drawer in fridge as usual. I have not had a lot of trouble keeping celery ok, but this makes it super crispy and nice anyway!! So sorry to hear your son and family lost all their cold food...that is so disheartening...sure hope things are resolved there soon!!

  3. I'm going to make your oven-roasted squash for Thansgiving dinner. We usually have chicken instead of turkey. Not such a huge amount of leftovers. Your apple cinnamon roll bake will be dessert. Love and hugs, Elaine
