We did get the storm that was predicted yesterday. I am not sure how much snow we actually got, a fair bit, but it was blowing about like crazy. There were times we couldn't even see across the road. It came on all of a sudden about 1:30-ish yesterday afternoon. My cleaners were supposed to be coming today but have been rescheduled to come Thursday instead.
I AM THINKING ...
Spring is just around the corner. We are nearing the end of February now. March winds doth blow. There was a little junco at the feeder yesterday. He stayed for quite a while and kept coming back. That was promising. I had stopped feeding the birds a few years back (except for the hummers) because the lady down at the end said they attracted rats. That's as may be, but I love bird watching and I have decided that I am not going to let someone else dictate the joys in my life because of someone else's negative thinking.
I AM ALSO THINKING ...
The other day someone who is trying hard to get their Facebook Page off the ground messaged me and asked me how did I keep from being discouraged by lack of interest, etc. I told them that they needed to decide "why" they wanted to do their page. I do mine simply because I enjoy sharing. Whether 10 people look at it or 100 people look at it. I don't pay attention to numbers. I just love sharing recipes. And connecting with people. If you love what you do, then the people who follow/read you will feel that love. Popularity is a double edged sword and comes with a layer of negativity. I would rather not have that. I am content to have just a small number of like minded, loyal invisible friends. I want my FB group to feel like home and safe for those who are interested in all things of the home, but in particular in cooking.
I AM GRATEFUL FOR ...
The opportunity I have to help my daughter get back on her feet emotionally and physically. This is a great blessing to me and I thank God for it every night. I also ask God to help me to be the best support and help for her that she needs. I hope that I am.
I AM ALSO GRATEFUL FOR ...
This opportunity that we are having together to foster our relationship and grow it even stronger than it was before. I love my daughter so very much. We have always been quite close. There was a few months where we were not so close, due to Covid and attitudes, but thankfully we were able to rise above that.
IN THE KITCHEN ...
Curried Chicken & Coconut Rice Casserole. This is a delicious one‑dish wonder. Tender pieces of chicken bake along with fragrant coconut rice, gently seasoned with curry powder, garlic, and herbs. As it cooks, the rice absorbs the creamy coconut milk and chicken juices, becoming rich, fluffy, and full of warm spice. Garnished with toasted flaked almonds, spring onions and a lush lime yogurt drizzle. Very nice.
