It's pretty quiet in here this morning. Snow is falling, but no the pretty kind. All I can hear is the sound of Eileen sleeping in the spare room and the heat pump blowing out warm air. There is a weather advisory in effect, as it is supposed to change to snow mixed with rain later on. Fun fun!
Eileen was supposed to go for blood tests this afternoon, but it is hard to say if she will get there or not. It may have to be rescheduled. I don't deal with any of that, her workers do all of that type of thing. They are supposed to have a Valentines party tomorrow. She has her Bible Study on Friday and then a People's First meeting afterwards. So far she has manage to avoid coming into contact with Tim, but I know it is coming. He is sure to be at the Valentine's party and also the PF meeting. I hope she will be okay.
Outwardly she seems alright, but because of her learning disability it is difficult to know how she is really feeling. All I can do is to be here to support her as best as I can. This girlfriend of his is six years older than he is. I know because I checked out her Facebook page. They are all in the same program. I hope that someone will sit the two of them (Tim and his GF) down and explain to them that they are being very disrespectful to flaunt their "relationship" the way that they are doing. It really isn't right.
I am not saying that I don't want him to be happy. I just wish he (and she) would be a bit more disrespectful of the feelings of others. But then, nobody likes to see their children hurting.
The cleaners came yesterday. They always do such a lovely job, not that my place is ever really dirty as it isn't, but I just love the way it sparkles and smells when they are done. Nutmeg hides the whole time they are here, but Cinnamon follows them around watching them the whole time. She is very interested in everything they do an likes to roll around on the clean floor after they mop it. Cats are such funny creatures.
As soon as they leave, Nutmeg appears as if by magic. It was quite funny one time when they were here. He came slinking out from his hiding place, thinking they had already gone and once he got halfway across the dining/living room area he realized that they were still here and he got the strangest look on his face, did an about-face and quickly slunk back to his hiding place in quick time. He is a funny little guy.
I confess I am getting a bit tired of the winter now. This has been a hard season with all of the health issues, and the heartbreak, etc. It will be good when things begin to turn weatherwise. I know we still have the winds of March to look forward to and of course April Showers, but the cold and snow is beginning to make us feel quite weary of it all. A change will be good. Once I get this latest stent removed then hopefully things will improve and we will be able to get about more. It seems that so far this year all the action has taken place in hospitals. I have not really been able to go anywhere else.
I did cook us a nice supper yesterday. Eileen had to go and sell tickets for a raffle and while she was gone I tried a new chicken recipe, which was quite nice. I didn't take any photos of it, unfortunately, as it was far too late in the day.
Forgotten Chicken. It did not look at all like this photograph, but it was really delicious. I had to take some chicken breasts out of the freezer to fit something Eileen had brought in and so I needed to cook them yesterday. It basically just involves laying the chicken out in a dish, covering it with some seasoning and onions, pouring some chicken stock over, covering it tightly and then slow roasting it for two hours. You can then uncover it and raise the oven temperature and cook for a bit longer until it colors nicely.
The chicken was very tender (which is amazing for chicken breasts these days). I also cooked some baby potatoes I had, tossing them together with garlic, butter and seasoning and we had broccoli. Eileen really enjoyed it. I will have to make it again and then take some pictures next time to share.
As I said it didn't look like the photo above, however. That looks like it is chicken in rice, but there is no rice in the recipe. I find that happens a lot these days. Many recipes you try don't look like they are supposed to from the photos shared. If I suspect AI has anything to do with them at all I will avoid the recipe like the plague. I prefer truth.
Other than these few things, there really hasn't been a lot going on. Life has settled into a bit of a routine. I have plans to help Eileen start a healing journal today. She is very spiritual and I thought I would pick out some scriptures that she might find helpful, etc. We will see.
I also want to bake a cake of some sort. (I know, still. I just haven't gotten it done!) Yesterday I had a bout of diverticulitis. I think because I hate some popcorn the night before. My innards rebelled. Eileen had a bag of Smart Popcorn and I ate a bit of it with her and I shouldn't have. Anyways, I hope to get a cake baked today. There are enough leftovers in the fridge to keep us happy otherwise. I seriously doubt we will be going out for supper tonight with Cindy and dad because of the weather, but you just never know!
In any case, I will end this now and leave you with a thought for the day . . .

In the Kitchen today . . . Ground Beef Casserole for Two. I showed Eileen how to make this the other day. We are starting a folder of easy recipes for her to take to her new apartment. This is a simple dish that is very easy to make and always comes out delicious. Sized for the smaller family.

I’m getting tired of winter, too. It’s more difficult for me to get around when it is snowy. Another storm. You’ve had your share this winter. I plan to make a chocolate cake for Valentine’s Day. I’m using a recipe of Ina Garten’s called “Beatty’s Chocolate Cake”. It uses a cup of fresh brewed coffee and buttermilk. It’s very delicious. If you do get out and about, drive safe.
