The Simple Woman's Daybook . . .

 

 FOR TODAY, March 31, 2020 


Outside my window...
Its fully light out and I am just starting this daybook when I am normally finishing it.  Darn you time change! LOL  Is anyone else having a difficult time remembering what day of the week it is?? 

I am thinking ... 
Today is the day my kids should have begun their journey over to see us. Trying hard not to be bummed about that, but hopefully the trip still can be made.  They have to use their tickets before the end of the year.  I hope and pray that they can.  It took Eileen so long to save up all that money. I would hate for her to lose it all.  Hoping and praying that this lock down doesn't last too long, but prepared for the long haul. 

I am thankful for ...
My God and my Saviour, prayer, a humble heart, an open mind, family, friends, modern technology, the NHS, our Government.  We can do this.  

In the Kitchen ...  

Anything Hash & Perfectly Poached Eggs 

Anything Hash with Perfectly Poached Eggs.  My  blood sugars have been up. Its hard a challenge to control them when you are cooking on food storage. Anyways, I made a hash using one leftover baked potato, some swede (rutabaga), broccoli stems, carrots, a small onion. . . . topped with a poached egg, this was our supper yesterday.

  1. Good morning, Marie. I sympathize about your blood sugars being a little high. Mine have come down a lot but are still hoovering between 7 and 9, still too high. My weakness is crackers and cheese before bed. It's a habit I need to break. I made lovely white bean and fennel soup yesterday. It was very tasty. I think I'll make your vegetable hash as I've got lots of veggies to use up. And your poached eggs are beautiful to look at and probably taste even better. I'm sorry your kids had to postpone their trip. Who would have guessed a world-wide pandemic would happen? This can't last forever and there are still 9 months to go to use their airline credit.     1. I know you know how I feel when I talk about my blood sugars being high. You feel really woozy, or a least I do! Stress probably doesn't help, although I am trying to remain positive. Nobody could have predicted what is happening to us all now. We just need to stay safe and stay healthy and we will all hopefully get through this. Love and hugs to you and Larry! xoxo

  2. Hi, Marie! We've been feeling a bit groggy since the time change the past weekend... it whooped our butts... haha! I'm so sorry you're not hat the joy of your children coming to visit. I hope it will be possible for them to come later--maybe Christmas?! :) There is so much to be thankful for these days--feeling that extra much! LOVE your hash--yum! I have a hash recipe on my list this week, with sweet potato, kale and black beans--a little different. ;) Ooo...that floral crochet blanket is stunning! Your current reading sounds really good! We've missed going to the library--something we do every other week or so. But we have books a-plenty, and ebooks too... so we'll be OK! We're in week 3 of the shutdown, but hanging in there!   3. Our time change happened before yours..not sure how I feel about it..poor sleeper here in any time zone..more like Twilight Zone these days.
    I hope your family gets there sooner than later too..

  4. It is such hard times and I do hoe your family members can still visit with you before the year is out. The timing just was right for now, but hopefully the will change. Nothing ever stays the same forever.

  6. This was a fun read. I always enjoy your day-book entries. I keep thinking I will do one, one of these days.
    I pray your sweet daughter will get over there before the end of the year. This is such a trying time but I think there will be big lessons learned that will help us in our lives.
    I always love your what you are creating and the book looks like a good one for right now even. My favorite is the dreaming one. The photos of the dogs and the clothes were adorable. Your little Jake is the cutest.
    It does feel like a ghost town at times here. Life has so slowed down; which I think is good in so many ways.
